I would like to know how frequently data is backed up in Sentry and how long this data is retained?

Quick answer:
Individual events are aggregated into broader issues. Individual events are deleted after the above retention period. When Issues are deleted all associated events are deleted.
We create regular backups of event data in production. We delete backups 30 or 90 days after creation depending on data type.
